It's important to have a conversation and find out as much as possible before booking. Listen for hesitation. Fear in her voice.
I only see 1 or 2 new girls for the whole year because of risks.

Don't feel disappointed with responses.
We don't know each other. We have no reason to insult each other. We have no reason to lie to each other.
Take each comment at face value. Don't look for malice.

The reason why the girl you meet sounds nothing like the girl that answers the phone is because they have a receptionist. It happened to me before. Not the same place. Anytime I call and speak to a receptionist, I take it as a red flag unless she makes a compelling offer.
You can find out if it's a receptionist because she's talking about a 3rd party. Spend some time trying to have a conversation if you can.
